MATERIALS:

  • FALAFEL
  • Arabic bread
  • Chinese cabbage
  • Grated carrot
  • Green onion
  • Pickled cucumber
  • Sun-dried tomatoes
  • Dill
  • Tahini (sesame paste)
  • Strained Greek yoghurt
  • Lemon juice
  • Olive oil
  • Lemon zest
  • Freshly ground pepper
  • Salt

FALAFEL RECIPE

IMPLEMENTATION:

  1. Bake or fry the falafel according to the instructions showed on the package.
  2. Mix ingredients until they are thoroughly combined to make the tahini sauce.
  3. Finely chop the remaining ingredients.
  4. Add lemon juice, adjust acidity to taste if necessary.
  5. Warm the Arabic bread, spread the tahini sauce in the centre.
  6. Top with falafels and the vegetable mixture.
  7. Finally, add freshly ground pepper, wrap it and enjoy!

*Replace strained yoghurt with coconut milk yoghurt for real vegan enjoyment.
